7 Super Healthy One-Pot Meals To Save On Dish-washing

It’s a Friday night. You’ve been looking forward to this night all week long. For once, you have no plans this weekend and so you have the whole weekend to chill by yourself. Aaah, so heavenly... But wait. What’s for dinner?

If you’re not in the mood for takeout; but don’t really like doing dishes or want to spend too much time in the kitchen, I’ve got a few one-pot meals that will likely save the day. 


#7 Quinoa Bowl

The great thing about quinoa is that it’s healthy, super quick to come together, and extremely versatile. Pair it with some leftover vegetables, chicken, or even a can of chickpeas and it comes together beautifully. It’s both filling and nutritious which makes it a win for everyone.

#6 Literally Any Stew

Stew is another one of my favorite meals to make on a busy day. The best part is, it can be made in so many different ways so even if you’re using the same vegetables, it can taste wildly different. You can make a coconut-based stew if you like it that way, a creamy, cheesy stew, or a plain soupy stew and they all taste SO GOOD.

#5 Spaghetti Bolognese

What? One pot spaghetti? I couldn’t believe it either, but it actually exists. Now, you may argue that spaghetti isn’t exactly healthy, however, using whole wheat pasta, paired with good, nourishing chicken or beef stock and some added vegetables inside makes for quite the healthy meal.

#4 Pulao (or Pulav)

Pulao is a rice dish with meat and/or vegetables that is typically cooked together and in some form of stock. If you are familiar with Indian or Middle Eastern Cuisine, you will know what I mean. There are several types of pulao from the mild to the spicy side and you can pair whatever you like with your rice, making it another one of those extremely versatile meals. The best part about this is that it can feed several people or make for good leftovers.

#3 Khichdi


Khichdi

Khichdi is an Indian dish that is typically made with one or more lentils and rice. It is often considered comfort food in most homes and if made really well, can be enjoyed for more than one meal. Lentils are an extremely good source of protein and vegetables can be added to any khichdi to rev up the nutritional value.

#2 Tuna Nicoise

I don’t know about you, but I love a good salad for dinner. There is nothing as satisfying to me than the mix of crunchy and creamy textures mixed with hits of tanginess and a bit of spice too. Tuna Nicoise is one of those salads. It’s packed with flavor, loaded with nutrition, and heavy enough to make a whole meal

#1 Chicken curry

Are  you a curry lover?  If so, this one-pot chicken curry recipe is SO easy and equally delicious. Chicken is one of my favorite things to cook because it is a lean meat, full of proteins, and absorbs the flavors it's cooked with, making it taste vastly different each time. Pair this with some flat bread like khubus, chapati, or even pita bread to enjoy it best.
