Budget-friendly valentine's day meals for the home chef


Valentine's Day is one sleep away! At least it is in my part of the world right now 🙂. I was never one of those people that despises these kinds of days, mainly because I love any excuse to make my loved ones feel special.


As a mom and wife, though, celebrating such occasions takes a lot more effort and planning than our pre-baby days. Since I celebrate my wedding anniversary in December and birthday in January, by the time Valentine's Day comes around our budget is tight-strapped.


If you can relate with having to celebrate when it's tight-quarters, you can appreciate that I've come up with Valentine's Day meals that you can make at home. The best part is - they're budget-friendly and look like a meal you'd be served in a restaurant.

Breakfast

Strawberry Nutella French Toast Roll-ups.



Ok, this is kind of indulgent, and not really healthy, BUT it's Valentine's Day! Surely that warrants a cheat day right? It looks beautiful, tastes delicious and is actually quicker than making regular french toast slices anyway..

XO Pancakes


If you want to steer away from the cheesy heart-shaped presentation, try spicing it up with a few XO pancakes!

Lunch

Loads of Love Pizza


Well really, it's just pizza in the shape of a heart. I just like to be extra cheesy with my titles (pun completely intended).


What I love about this is that you can make it as healthy or as indulgent as you like. It's such a versatile dish wherein toppings can be customized for each person. What's better is it's fun to get the kids involved in the process.


Dinner

Roasted-heart potatoes & Instant pot roast chicken.


My mouth is literally watering while typing this. I love a good roast dinner. I, however, don't have a good enough oven, so I use a pressure cooker and it actually works wonders.


Potatoes are absolutely relished by my husband and daughter which makes these cute little potatoes so much fun to make.

This recipe for chicken works really well even with dried herbs, if you don't have the fresh ones. You can also do the chicken in a regular vessel, but I recommend slow cooking it so that it absorbs all the lovely flavor.
